目的查明食物中毒发生的原因,确定引起中毒的致病因子,为卫生行政部门制定食品卫生管理政策提供方向和依据。方法根据现场流行病学调查方法,使用食物中毒个案调查表等收集相关信息,现场采集生物样品、剩余食品及食品加工场所的环境样品送实验室进行相应致病菌检验,检验结果按照国家相关标准评价。结果根据流行病学调查资料、病人临床表现及实验室检验结果综合分析,此次事件符合食物中毒流行病学特点,并判定此次事件是弗劳地柠檬酸杆菌污染食品引起的食物中毒;发生原因为冷荤食品酱猪蹄在加工过程和储存过程中被弗劳地柠檬酸杆菌污染,由于食品储存不当致使细菌大量繁殖,并且食用前未经再次加热,最终导致了中毒事件的发生。结论餐饮业的加工间环境卫生问题和从业人员的食品卫生知识及食品安全意识缺乏仍然是食品安全事故防控工作中的重点,建议卫生行政部门进一步完善管理制度并加大相应的管理力度,保障人民群众的饮食安全。
Objective To identify the causes of food poisoning and to identify the causative agents that cause the poisoning and provide the direction and basis for the health administrative department to formulate food hygiene management policies. Methods According to the field epidemiological survey method, the relevant information was collected by using the food poisoning case questionnaire, etc. On-site collection of biological samples, the remaining food and environmental samples of food processing sites were sent to the laboratory for pathogen detection. Results According to epidemiological survey data, clinical manifestations and laboratory test results of a comprehensive analysis of the incident in line with the epidemiological characteristics of food poisoning, and determine the incident is caused by Freund ’s Citrobacter contaminated food caused by food poisoning; occurred The reason is that cold meat foodstuffs trotters are contaminated by Citrobacter freundi during processing and storage, bacteria multiply due to improper storage of foodstuffs, and the food is not heated again before consumption, which eventually leads to the occurrence of poisoning. Conclusions Environmental health problems among processing enterprises in the catering industry and the lack of awareness of food hygiene and food safety among employees are still the key points in the prevention and control of food safety accidents. It is suggested that the health administrative departments should further improve the management system and increase the corresponding management efforts to ensure that People’s diet safety.
