桐油是一种工业用油。因其含有的桐子酸(9,11,13-十八碳三烯酸)甘油酯是一种有毒、有害物质,所以,桐油绝对不准食用,否则,就会引起严重中毒。但是,由于桐油易干燥、无异味、色泽好、价格低,且与食用植物油(豆油、花生油)的感官性状极其相似,就有一些个体商贩在食用植物油中掺加桐油,用来炸油条、炸鸡等。如果食用了此类食品,就会引起食物中毒。对此,我们进行了研究,确定了油炸食品中桐油的快速检测方法。
