酵米面是我国东北地区农村调剂膳食的一种食物,是把粗粮(主要是玉米)加水浸泡10—30天左右,然后水洗磨浆,经纱布过滤、沉淀晾干成粉。利用此粉可加工做面条、饺子等食品,偶有发生中毒,称为酵米面中毒。1961年,辽宁省卫生防疫站金家香在辽宁省建平县食物中毒样品中,首先分离出“黄色菌”,经复制菌粮,喂饲小白鼠可使小白鼠死亡,提出了“黄色菌”在酵米面中毒病因学上具有重要意义。以后各地继续进行了大量工作。
Ramen noodles is a kind of food that is used to adjust the diet in rural areas of Northeast China. It is to soak coarse grains (mainly corn) with water for about 10-30 days, and then washed with water, filtered through gauze and dried to form powder. The use of this powder can be processed into noodles, dumplings and other food, occasionally poisoning, known as the surface of rice noodles poisoning. In 1961, Jin Jiaxiang, a health and epidemic prevention station in Liaoning Province, first isolated the “yellow bacteria” from food poisoning samples in Jianping County of Liaoning Province. After the replication of bacteria food, mice were sacrificed and the “yellow bacteria” Egg yolk disease is of great significance. After that, a great deal of work went on in various places.
