《诗经·豳风》有“七月烹葵及菽”。《仪礼·士虞礼》有“夏秋用生葵”的诗句。这个“葵”没疑问,是古代广布全国的野葵,后来又叫冬寒菜、冬苋菜(Malva uerticillata L.),开淡红色的花。从前人对它评价很高,说“葵为百菜之王,备四时之馔”(见明人《农桑通诀》)。六朝著名文人鲍照《园葵赋》说它“甘旨蓓脆,柔滑芬芳”,可见口感甚好。它还有医疗作用,“消淋逐水,润胃调肠”。野葵直立茎高不过60~90厘米,《本草》称它“卫足”,因为它的叶子朝向太阳,由东而西。晋陆机《园葵》诗“朝倾东北荣,夕颖西南晞”。倒有点和菊科向日葵有
