生姜在我国南方各省栽培面积很大,收获扣每年有大量出口供应国际市场。生姜的食用部分是姜的根状茎,根状茎中含有姜油酮,姜油酚、姜油醇及蛋白质、糖、粗脂肪等营养物质。生姜在15~18℃以上便发芽,日平均温度25~29℃是适宜发芽生长的温度。广东生姜收获后除部份供应市售外,大部份进行贮藏。由于气温较高,每年四月以后,在室温的情况已适合生姜发芽。经发芽的生姜营养成份降低,影响质量。每年生姜在贮藏过程中发芽及腐烂,所造成的经济损失相当大,为此,我们于1980年开始应用钴~(60)γ——射线照射新收获的生姜,有效地抑制了生姜的发芽。
