平菇的味道鲜美,营养丰富,蛋白质、脂类、糖类、磷、铁、钙以及维生素B_1、B_2.C、尼克酸、胡罗卜素等含量都非常高。此外,还含有一些抗菌物质、核苷酸和增强机体功能的多糖。在蛋白质中,人体所必需的氨基酸几乎都有。异亮氨酸、亮氨酸、赖氨酸、蛋氨酸、苯丙氨酸、苏氨酸、色氨酸、精氨酸、缬氨酸及其它氨基酸,在平菇中所含比率是十分高的。就营养价值来说,其它食物如鱼类、肉类等都不能和平菇相比。现将我们以平菇作材料进行的三个实验结果介绍如下。
