韭菜又名起阳草,属百合科多年生草本植物,具健胃、提神、止汗固涩、补肾助阳、固精等功效,在我国有着悠久的栽培历史。其风味鲜美,含有矿质营养、丰富的胡萝卜素与维生素C和纤维素,是调节蔬菜淡季供应,增加花色品种的重要蔬菜。在我国北方,韭菜的栽培面积仅次于黄瓜而居第二位,在发展冬春蔬菜生产和保证周年均衡供应方面占有重要的地位。
