目的掌握开封市市售食品中食源性致病菌污染状况,确定该市高危食品,为预防控制食源性疾病提供科学依据。方法依据国家标准和《2013年国家食源性致病菌监测工作手册》对从该市市场采集的9大类食品共243份样本进行了8种食源性致病菌的分离与鉴定。结果 243份样品中检出致病菌19株,总检出率为7.82%。铜绿假单胞菌的检出率最高(26.09%,6/23),其次为蜡样芽孢杆菌(15.38%,6/39)。9类食品中桶装饮用水污染最为严重,其次是乳及乳制品。结论该市食品存在食源性致病菌污染,个别致病菌污染较为严重,尤其是桶装饮用水中的铜绿假单胞菌污染,各监督管理部门应加强对污染严重食品的监管,保障人民群众饮食安全。
Objective To grasp the contamination status of food-borne pathogenic bacteria in the commercial food in Kaifeng City and to identify the high-risk food in the city, so as to provide a scientific basis for the prevention and control of food-borne diseases. Methods Based on the national standards and the “2013 National Food-borne Pathogen Surveillance Workbook”, a total of 243 samples of 9 kinds of food collected from the market were collected for isolation and identification of 8 food-borne pathogens. Results Twenty-nine pathogenic bacteria were detected in 243 samples with a total detection rate of 7.82%. The detection rate of Pseudomonas aeruginosa was the highest (26.09%, 6/23), followed by Bacillus cereus (15.38%, 6/39). Bottled drinking water in 9 categories of food is the most polluted, followed by milk and dairy products. Conclusion The food in the city is contaminated by food-borne pathogenic bacteria and the pollution of some pathogenic bacteria is serious, especially the pollution of Pseudomonas aeruginosa in bottled drinking water. All supervisory and administrative departments should strengthen the supervision over the contaminated food and ensure the people Food safety of the masses.
