饮食营养学是涉及多个领域知识的综合性学科,所涉及的内容主要有烹饪学、美学、生物学等,它与人们的生活息息相关,是一门应用性较强的学科。餐饮服务专业饮食营养学教学的目的在于能够使学生掌握基本的与食品健康、食品营养有关的知识。但是当前,我国餐饮服务专业饮食营养学的教学还存在较多问题,主要表现在重理论轻实践,教学模式仍然停留在传统的灌输式的教学方式上,严重制约着餐饮服务业学生的综合素质能力的提升。
