目的了解宁夏熟肉制品中常见食源性致病菌的污染状况及分布。方法采用随机抽样的方法对全区8个监测点进行连续监测,并按照国家标准进行检验和评价。结果 2010年-2012年间宁夏熟肉制品中年平均检出率最高的食源性致病菌为金黄色葡萄球菌(1.79%),其次为单核细胞增生李斯特菌(1.07%);金黄色葡萄球菌在酱卤类肉制品中的检出率最高(2.25%),单核细胞增生李斯特菌在蒸炒类肉制品中的检出率最高(2.54%);农贸市场的食源性致病菌检出率最高(4.93%)。结论宁夏熟肉制品中存在不同程度的食源性致病菌污染,尤其是农贸市场的样品污染最为严重,应加强卫生监督管理。
Objective To understand the status and distribution of common food-borne pathogens in cooked meat products in Ningxia. Methods The random sampling method was used to continuously monitor 8 monitoring points in the whole district and to test and evaluate according to national standards.
