目的了解徐州市学校食堂餐具消毒现状,为进一步制订有效的管理措施提供依据。方法采用统一调查表以及大肠菌群快速检验纸片,按卫生部“食(饮)具消毒卫生标准”规定的方法进行检测。结果餐具检测合格率幼儿园高于大中专院校和中小学,量化管理A级食堂高于B级和C级,建立餐具清洗消毒制度、有专人负责餐具洗消、有餐具消毒记录的食堂餐具合格率较高。结论应加大餐具消毒情况的监督力度,加强对量化分级B、C级单位的监管。
Objective To understand the status quo of tableware disinfection in Xuzhou school canteens and provide basis for further effective management measures. Methods Using the unified questionnaire and coliform rapid test paper, according to the Ministry of Health “food (drink) with disinfection health standards ” method for testing. Results Tableware test pass rate Kindergarten higher than the colleges and secondary and primary schools, quantitative management A-class canteens higher than the B-and C-level, the establishment of tableware cleaning and disinfection system, a person responsible for dishwashing disinfection tableware canteen cutlery Pass rate higher. Conclusion Supervision of tableware disinfection should be stepped up and supervision of quantified grading B and C units should be strengthened.
