稻谷在收获后未及时干燥,致使稻谷大批变质,由这些稻谷辗出的米称为变黄米。变黄米煮成的饭不香,味道差。日本人五十年代就从黄米分离出岛青霉、桔青霉、黄绿青霉、Prugulosum、P.fardum等有毒霉菌,日本人也在中国运去的大米中分离出有毒霉菌。他们证明黄米提取物对大、小鼠有急性毒性、慢性毒性以及引起肝脏发生癌前期的病理形态变化。所以研究变黄米的毒性(包括致畸、致突变、致癌)是当前一个迫切问题。
The rice is not dried in time after harvest, resulting in a large number of rice metamorphism, the rice rolling out of these rice is called yellow rice. In the 1950s, Japanese people isolated toxic mildew from Penicillium, Penicillium citrinum, Penicillium chrysogenum, Prugulosum and P.fardum from the yellow rice. Japanese also isolated toxic molds from rice shipped from China. They showed that the yellow rice extract had acute and chronic toxicity to large mice and mice, as well as caused the pathological changes of precancerous lesions in the liver. Therefore, the study of the toxicity of yellow rice (including teratogenic, mutagenic, carcinogenic) is an urgent problem.
