所谓鱼翅,指的是连接鱼鳍2条针形骨之间的结缔组织,经过加工后的食用品。长期以来被人们奉为保健珍品,不惜花大价钱购买,以致鱼翅消费热不断升温,其实在科学家的眼里不过是一个神话而已。原来,鱼翅的主要成分不过是归属于纤维蛋白的胶原蛋白,而胶原蛋白从营养学上讲是较次的一种蛋白质,氨基酸的构成不佳,与人体的需求不大符合,远不如白蛋白、球蛋白。与其吃鱼翅摄入一点胶原蛋白,还不如喝牛奶吸收白蛋白、吃猪瘦肉吸收球蛋白更有价值。说穿了,鱼翅的营养顶多只能和鱼冻、肉冻排在一个档次上。
The so-called shark’s fin, refers to the connection between the two fin fins connective tissue, processed food products. For a long time been regarded as health treasures of people, at a price to buy, resulting in rising heat consumption of shark’s fin, in fact, the eyes of scientists is nothing but a myth. It turned out that the main component of shark’s fin is attributed to fibrin collagen, while collagen is more nutritionally secondary protein, amino acid composition is poor, and the human body does not meet the demand, far less albumin ,globulin. Rather than eat shark’s fin intake of collagen, not as good as drinking milk to absorb albumin, eat pig lean more valuable absorption of globulin. To put it bluntly, the nutrition of shark’s fin can only be at best with the frozen fish and the frozen meat.
