竹笋为禾本科多年生常绿植物竹子的未出土或刚出土的短缩肥大芽,外有壳,出土前着生于竹鞭上,柔嫩多肉,鲜美可食.竹笋出土后不久,迅速长为竹子,组织呈纤维化,不能食用.我国是竹的原产地之一,资源丰富.各种品种的竹子都能产笋,不过供食用的竹笋须柔嫩,无苦涩异味.竹笋产于长江以南,在春、夏及冬淡上市,尤以春笋为佳,深受城乡居民的欢迎.宋朝大诗人苏东坡说:“长江绕廓知鱼美,佳笋连山味更香”,赞扬竹笋比鱼还香.
