松花皮蛋中的溏心皮蛋由于加工配料时加入一定量的一氧化铅,其成品中含铅量一般在1—5ppm,但硬心皮蛋和新工艺池制的溏心松花皮蛋中含铅量一般低于1ppm。用火焰原子吸收法测定时,需采取富集浓缩手续或加大取样量以达到灵敏度的要求。本试验是在火焰原子吸收法中采用微量进样技术,直接用水溶液喷雾测定含铅0.05—10ppm的各类皮蛋及鲜蛋中的铅。标准回收在92—104%。变异系数为3.8%。
