金针菇FV8812是我们筛选获得的一株适合深层发酵的高产优质菌株,SFV9是国内栽培生产上常用优质菌株.金针菇营养极丰富,尤含多种氨基酸,人体必需8种氨基酸含量高于一般菇类,而赖氨酸和精氨酸等含量特别丰富.还含有具抗癌功能的朴菇素,因而是一种很好的保健食品.为探索深层发酵菌丝体代子实体在食品加工中应用的可能性,我们作了本项研究.
