目的了解新疆巴里坤县城内餐饮业餐具消毒状况,为卫生行政部门加强食品卫生监督管理,进一步规范饮食单位的卫生监督管理提供依据。方法采用大肠菌群快速检测纸片法,依据国家《食(饮)具消毒卫生标准》(GB14934-1994)对辖区内餐饮单位的餐饮具进行采样、检测、评价。结果 2009~2011年巴里坤县城餐饮具消毒合格率为61.31%(1 317/2 148),2011年餐饮具消毒合格率为61.73%(442/716),比前两年略高,其中筷子的消毒合格率较高(77.50%),盘子的消毒合格率较低(50.20%)。结论要进一步加强餐饮业的卫生监督管理,督促餐饮单位严格执行餐具消毒程序,尤其要加大对小餐厅从业人员餐具消毒知识的培训,提高从业人员的卫生意识,以保障公民的饮食卫生安全。
Objective To understand the status of tableware disinfection in catering industry in Barkol County, Xinjiang, to provide basis for health administrative departments to strengthen food hygiene supervision and management and further standardize hygiene supervision and management of catering units. Methods The method of rapid detection of coliform bacteria was used to sample, test and evaluate tableware of catering establishments under the jurisdiction of the State Food and Drug Hygiene Standard (GB14934-1994). Results The qualified rate of tableware disinfection in Barkolun county from 2009 to 2011 was 61.31% (1 317/2 148). The qualification rate of tableware disinfection in 2011 was 61.73% (442/716), slightly higher than that of the previous two years, with chopsticks Disinfection pass rate is higher (77.50%), plate disinfection pass rate is low (50.20%). Conclusion It is necessary to further strengthen the hygiene supervision and management of the catering industry and urge the catering units to strictly implement the procedures of disinfection of tableware. In particular, training on the disinfection knowledge of tableware employees should be increased so as to enhance the hygiene awareness of employees so as to ensure the safety of citizens’ catering hygiene.
