[目的 ]对天峨野生大果山楂 ( Malus doumeri)酒中氨基酸 (游离氨基酸、水解氨基酸 )、总黄酮进行含量测定。 [方法 ]利用高速氨基酸分析仪和分光光度计分别测定该酒中游离氨基酸、水解氨基酸和总黄酮类的含量。 [结果 ]该酒含 1 7种游离氨基酸 ,含量为 30 .89% ;1 6种水解氨基酸 ,含量为 99.2 5 % ;总黄酮含量为 1 5 .43% (单位 mg/ml)。 [结论 ]该酒富含氨基酸和总黄酮化合物 ,具有较强的生物活性
[Objective] To determine the contents of amino acids (free amino acids, hydrolyzed amino acids) and total flavonoids in Malus doumeri wine. [Methods] The contents of free amino acids, hydrolyzed amino acids and total flavonoids in the wine were determined using a high-speed amino acid analyzer and a spectrophotometer. [Results] The wine contained 17 free amino acids with a content of 30.89%; 16 kinds of hydrolyzed amino acids with content of 99.25%; total flavonoid content was 15.43% (unit mg/ml). [CONCLUSIONS] This wine is rich in amino acids and total flavonoids and has strong biological activity.
