辣椒是我国人民喜爱的蔬菜,其营养价值高,富含多种维生素,是主要的调味剂之一。辣椒起源于中北美洲热带地区的墨西哥,秘鲁等地,是古老的栽培作物。辣椒是一种营养价值丰富的蔬菜,它含有人体必需的多种维生素,矿物质元素,纤维素,碳水化合物,蛋白质。鲜辣椒中含有维生素A,红辣椒中含有胡萝卜素。它们中的维生素A可以预防夜盲症,具有防癌抗癌的作用。辣椒中的维生素C的含量为所有蔬菜之冠;鲜辣椒中富含维生素B1,维生素B2,维生素D;辣椒中矿物质含量较多的有磷,钙,铁;鲜辣椒中含碳水化合物,可释放能量,辣椒中还含少量人体代谢所需的脂类物质,如脂肪,树脂,蛋白质及纤维素。
