三道茶 流行于云南大理的白族地区,他们用三道茶待客。三道茶是三次用不同的配料泡茶,风味各异,概括为头苦二甜三回味。头道茶为苦茶,把茶叶放入小陶罐中用文火烤至微黄并有清香味时,再冲入沸水,泡成浓酽的茶汁饮用,味浓且苦,故称苦茶。第二道茶为甜茶,是用茶叶嫩芽和核桃仁、烤乳扇、冰糖蜜饯或蜂蜜等用沸水冲泡而成。此茶甜滋滋的,故称甜茶。第三道茶为回味茶,是用茶叶嫩叶
