为了研究广西北海特有种方格星虫的经济价值,测定了成虫干体的氨基酸含量,并根据FAO/WHO的氨基酸评分标准模式进行氨基酸营养价值评价。于2013年2、5、8和11月,分别在北海的山口、北暮盐场、营盘、大冠沙和竹林5个海域采集方格星虫,进行了氨基酸含量和组成分析。结果表明:北暮盐场方格星虫干体氨基酸平均含量最高,达到(68.02±0.50)%;5个海域方格星虫干体氨基酸含量、必需氨基酸和非必需氨基酸含量随着季节变化表现出先上升后下降的趋势;共检出16种氨基酸,以谷氨酸含量最高,占方格星虫干体质量的(17.34±0.61)%;方格星虫必需氨基酸占总氨基酸含量(EAA/TAA)和必需氨基酸与非必需氨基酸的比值(EAA/NEAA)均接近于FAO/WHO的理想模式。本研究为开发具有食用价值和药用价值的食品以及方格星虫的高值化利用提供理论依据和技术支撑。
In order to study the economic value of the endemic species of Beihai, Beihai, Guangxi, the amino acid content of dry adults was determined. The nutritional value of amino acids was evaluated according to the FAO / WHO standard pattern of amino acid score. In February, February, August, August and November 2013, the contents of amino acids and their composition were analyzed in the five sea areas of Yamaguchi, Kitamura, Yingpan, Dagangsha and Zhulin respectively in the North Sea. The results showed that the average content of amino acids in the dry body of Beidamu salt field was the highest, reaching (68.02 ± 0.50)%. The contents of amino acids, essential amino acids and nonessential amino acids of the pyramidal gasters in the five seas showed the first increase after the seasons (17.34 ± 0.61)% of the dry body mass of the gastrodia glutathione; the total amino acid content (EAA / TAA) and the necessary The ratio of amino acids to nonessential amino acids (EAA / NEAA) was close to the ideal mode of FAO / WHO. This study provides theoretical basis and technical support for the development of foods with edible value and medicinal value and the high value utilization of Pleurotus intermedius.
