根据蛋白质消化后在碱性条件下与纳氏试剂显色,提出了一种快速测定食品中蛋白质的消化-分光光度法,结果表明有色物质的最大吸收波长为410nm,摩尔吸光系数为514×104L/(mol·cm),线性范围为0~30mg/L,变异系数为086%,与凯氏定氮法比较无显著性差异
According to the digestion of protein and Nessler ’s reagent under alkaline conditions, a rapid digestion - spectrophotometric method for the determination of protein in food was proposed. The results showed that the maximum absorption wavelength of colored material was 410 nm and the molar absorptivity was 5.14 × 104L / (mol · cm), the linear range was 0 ~ 30mg / L, the coefficient of variation was 086%, no significant difference compared with Kjeldahl method
