江苏无锡市果茶研究所于1977年开始进行以选育适于我省栽培、适制红碎茶的品种为目的的新品种选育课题,以期从选择和改良品种来提高我省红碎茶品质。从目前品种适制性试验的初步结果看,效果是明显的。一、改善物质基础人们都知道南方的大叶种红碎茶之所以品质好,特别是浓强度比小叶种高,是因其优良的品种特性和适宜的生长条件所赋予的,它突出地表现为茶多酚、儿茶素含量高。即使在生长条件并不十分好、比较寒冷的江苏,只要能适应生长,某些优良的大叶品种尽管受到一定程度的压抑,仍然顽强地表现出它的生化组分上的特点。
