松针落叶中含有大量的黄酮类化合物,研究发现松针黄酮对各种自由基均有较强清除作用,总体抗氧化活性很强,对金属离子有很好的螯合作用,并可以在一定程度上抵抗蛋白质的羰基化氧化。但在不同的浓度、温度、pH值等条件下,其表现出的抗氧化活性却差异很大。试验结果表明,松针黄酮的抗氧化性能总体强于Vc,同时又验证了其与Vc有良好的协同作用。
