目的了解部队食堂的环境卫生状况,以便有针对性地采取改进措施,提高环境卫生质量,保证官兵饮食卫生安全。方法对食堂的空气、物体表面、从业人员手和餐具进行采样监测。结果 2009年共采样565份,合格512份,平均总合格率为90.6%,采取改进措施后,2010年共采样582份,合格554份,平均总合格率为95.2%,2011年采样586份,合格568份,平均总合格率为96.9%。结论部队食堂环境卫生状况应引起重视,按照食品管理有关要求,采取有力的措施,能有效提高食堂环境卫生状况,确保官兵就餐安全。
Objective To understand the state of sanitation in the military canteens so as to take targeted improvement measures to improve the quality of sanitation and ensure the hygiene and safety of officers and soldiers. Methods The canteen air, surface, practitioners hand and tableware sampling and monitoring. Results A total of 565 samples were obtained in 2009, with an average passing rate of 90.6%. After improvement measures were taken, a total of 582 samples were obtained in 2010, 554 were qualified, with an average total pass rate of 95.2% and 586 samples in 2011, 568 qualified, with an average total passing rate of 96.9%. Conclusion The situation of environmental sanitation in military canteens should be taken seriously. Taking effective measures according to the relevant requirements of food management can effectively improve the environmental sanitation of canteens and ensure the safety of officers and soldiers in dining.
