上个世纪80年代,法国科学家注意到一个奇怪的现象。法国人的饮食脂肪含量非常高,而且主要是黄油、奶油、奶酪等动物脂肪食品。动物脂肪富含饱和脂肪酸和胆固醇,摄入过多会增加心血管疾病特别是冠心病的风险。在动物脂肪摄入量都很高的西方国家,冠心病死亡率非常高,但法国却是个例外。其中对比最明显的是法国和芬兰。这两个国家膳食中动物脂肪的量差不多,但是芬兰冠心病死亡率是法国的大约5倍。虽然几十年来两国冠心病死亡率时高时低,这个比例却基本不变。
