[目的]研究快中子辐射对稻米直链淀粉含量和支链淀粉结构的影响。[方法]对泰国水稻栽培品种JaoHomNin的辐射M4代进行了直链淀粉含量和直链淀粉结构测定与分析。[结果]快中子辐射可以改变稻米的直链淀粉含量,从而获得直链淀粉含量较高的变异个体,也可以获得直链淀粉含量较低,甚至接近糯稻水平的突变后代,但是快中子辐射对稻米的支链淀粉的结构基本上没有影响。[结论]为利用快速中子辐射筛选不同直链淀粉含量的水稻品种,以满足不同人类消费群体的食味嗜好和不同稻米制品深加工提供参考依据。
[Objective] The research aimed to study the effect of fast neutron radiation on amylose content and amylopectin structure in rice. [Method] The amylose content and amylose structure of M4 generation of Thai rice cultivar JaoHomNin were measured and analyzed. [Result] Fast neutron radiation could change the amylose content of rice so as to obtain mutant individuals with higher amylose content, and also to obtain mutant offspring with lower amylose content or even close to glutinous rice. However, fast neutron Radiation has virtually no effect on the structure of rice amylopectin. [Conclusion] In order to screen rice varieties with different amylose content by using rapid neutron radiation, this study could provide references for satisfying the taste preferences of different human consumption groups and the deep processing of different rice products.
