以‘山梨’果实和叶片为试材,测定分析了其发育过程中主要有机酸含量变化及二者有机酸含量变化间的关系。结果表明:果实发育过程中,苹果酸、草酸和乳酸总体呈增加趋势,奎尼酸、莽草酸、柠檬酸、乙酸、琥珀酸和有机酸总量总体呈下降趋势;叶片发育过程中,苹果酸、奎尼酸、乳酸、琥珀酸和有机酸总量总体呈增加趋势,草酸和柠檬酸总体呈下降趋势,莽草酸和乙酸变化极小;果实和叶片发育过程中有机酸含量变化的相关性分析表明,二者在苹果酸之间、奎尼酸之间、草酸之间、莽草酸之间以及乳酸之间的含量变化都呈正相关,柠檬酸之间以及琥珀酸之间、有机酸总量之间含量变化都呈负相关,但相关性都没有达到显著水平;说明果实和叶片中7种有机酸以及有机酸总量的积累机制不同。
