对山东莱芜生姜井窖贮藏时窖内环境、根茎解剖结构及生理等变化的测定表明,窖内空气相对湿度始终在95%以上;温度、0_2及CO_2浓度均变化剧烈。根茎保护组织由木栓化细胞层和拟木栓形成层两部分组成,从入窖第10天开始发生,33天基本完成。呼吸强度前18天升降剧烈,其后趋于稳定。干物质、蛋白质似无变化;糖和淀粉发生相互转化变化,纤维素则不断增加。莱芜生姜之所以能长期贮藏并保持其品质,正是井窖环境适宜的结果。
The determination of the environment, root anatomical structure and physiological changes of ginger cellar in Laiwu of Shandong Province during the storage showed that the air relative humidity in the cellar was always above 95%, and the temperature, 0_2 and CO_2 concentrations changed drastically. Rhizome protection organizations by the cork cell layer and the formation of pseudo-wood thrombosis two parts, from the cellar on the 10th day, 33 days basically completed. Respiratory intensity rose sharply 18 days before, and then stabilized. Dry matter, protein-like no change; sugar and starch mutual transformation changes, cellulose is increasing. Laiwu ginger is able to long-term storage and maintain its quality, it is the appropriate cellar environment results.
