目的了解邢台市学校食堂食品安全现状,为进一步搞好学校食品安全管理提供对策。方法对邢台市60家学校食堂进行现场摸底调查。结果 60家学校食堂均有餐饮服务许可证,22家学校食堂无健全的食品安全管理制度及岗位责任制;42名从业人员无健康证,从业人员食品安全知识知晓率低;18家学校食堂食堂布局和工艺流程不合理;20家学校食堂采购食品及其原料无索证或索证不全,且无验收制度;对240份餐具进行检测,189份合格,51份不合格,合格率为78.75%;电蒸车和消毒柜的消毒效果与药物消毒效果相比差异有统计学意义。结论加强学校食堂从业者的食品安全意识,鼓励学校食堂自我监督,更新卫生设备;加大执法力度,规范企业经营行为;建立学校食堂电子档案,提倡集中定点采购长效机制,改进卫生监督方法,加强预防性卫生监督和经常性卫生监督是预防学校食堂发生食物中毒和其他食源性疾患的有效途径。
Objective To understand the status quo of food safety in school cafeteria in Xingtai and provide countermeasures for further improving school food safety management. Methods A total of 60 school canteens in Xingtai were surveyed on site. Results 60 school canteens have catering service permits, 22 school canteens without sound food safety management system and job responsibility system; 42 employees without health certificates, food safety knowledge of practitioners awareness is low; 18 schools canteen canteens Layout and process unreasonable; 20 school canteens procurement of foodstuffs and their raw materials without certification or certificate of evidence is not complete, and no acceptance system; testing of 240 tableware, 189 were qualified, 51 were unqualified, with a pass rate of 78.75% ; Electric steam car and disinfection cabinet disinfection effect compared with the drug disinfection effect difference was statistically significant. Conclusion The school cafeteria practitioners should strengthen food safety awareness, encourage school canteens to self-supervise and update sanitary equipment, intensify law enforcement efforts and standardize their business operations, establish e-archives for school canteens, advocate centralized long-term procurement mechanism, improve health supervision methods, Strengthening preventive health surveillance and regular health surveillance are effective ways to prevent food poisoning and other food-borne diseases in school canteens.
