醋糟是食醋酿造厂的废料,常做为废料丢弃,易造成环境污染。据测定鲜醋糟含水分64~76.5%、粗纤维3.0~4.2%、粗蛋白6.9~8.5%、粗脂肪1.9~3.5%、无氮浸出物14.8~17.5%、粗灰分0.6~0.7%。这些有效成分可被食用菌利用,而目前随着食用菌栽培量的不断扩大,棉籽壳出现紧缺,价格上涨,从而导致栽培成本提高。如果以醋糟为主料代替部分棉籽壳栽培食用菌,将会缓解棉籽壳紧缺,降低成本,并能达到利用生物
