目的了解本市市售食品中主要微生物的污染状况,为食品安全风险评估和管理决策提供基础资料。方法依照《2011年河南省食源性致病菌监测计划》要求,抽取郑州市9类食品共计216件样品,按照《2011年国家食源性致病菌监测网工作手册》中提供的检测技术要求进行3项卫生指标菌和7项致病菌分离鉴定。结果 216份样品共检出17株致病菌,检出率为7.9%。其中金黄色葡萄球菌检出率最高,为5.1%。9类食品中熟肉制品检出率最高,为29.2%,共检出6株金黄色葡萄球菌和1株单核细胞增生李斯特氏菌,其次为中式凉拌菜检出3株单核细胞增生李斯特氏菌,检出率为12.5%,而沙门氏菌、志贺菌和大肠埃希氏菌0157:H7未检出。卫生指标不合格率为36.1%,主要集中在熟肉制品、中式凉拌菜和鲜榨果汁。结论该市食品中微生物污染较严重,应进一步加强监管食品生产和销售等各个环节。
Objective To understand the pollution status of the main microorganisms in the commercially available foods in this Municipality and provide basic information for food safety risk assessment and management decision-making. Methods A total of 216 samples of 9 kinds of food in Zhengzhou City were collected according to the requirements of “Foodborne Pathogen Monitoring Plan of Henan Province in 2011”. According to the detection techniques provided in the “2011 National Foodborne Pathogenic Network Monitoring Manual” Requires three health indicator bacteria and seven pathogens isolated and identified. Results Totally 17 pathogenic bacteria were detected in 216 samples with a detection rate of 7.9%. The highest detection rate of Staphylococcus aureus, 5.1%. The highest detection rate of cooked meat products in the 9 categories was 29.2%. Six Staphylococcus aureus and one Listeria monocytogenes were detected, followed by three Chinese saladseed samples Listeria, the detection rate was 12.5%, while Salmonella, Shigella and Escherichia coli 0157: H7 were not detected. Health indicators failed rate of 36.1%, mainly in cooked meat products, Chinese salad and freshly squeezed juice. Conclusion The microbial contamination of food in the city is more serious, and the production and marketing of food should be further strengthened.
