[目的]了解九江市餐饮业食品卫生现状,分析与评价实施量化分级管理评分情况,发现在实施量化分级管理过程中存在的不足,提出管理对策。[方法]采用普查方法,得出2006~2007年各季度全市餐饮单位的卫生许可情况及分级量化结果,分析其现状和未来走势。[结果]九江市2年间获得许可的餐饮单位从2520个猛增到4766个,但小型单位一直占据80%左右,而其2007年底卫生量化等级几乎全为C或D,其余20%大中型单位等级多为B和C,A仍只占1.2%。[结论]九江市餐饮单位数量逐年上升,且主要来自小型餐饮单位的快速增加,他们也是分级量化管理实施的难点,表现为低评级的数量和比例最多。今后工作应着重于引导他们自觉改良卫生情况,提高评估等级,同时加大对消费者的宣传。
[Objective] To understand the status quo of food hygiene in catering industry in Jiujiang, analyze and evaluate the implementation of quantitative management grading, find the shortcomings in the implementation of quantitative management, and propose management strategies. [Methods] The census method was used to obtain the health permission situation and grading and quantification results of catering units in all quarters in 2006 and 2007, and to analyze the status quo and future trends. [Results] The number of licensed catering units jumped from 2520 to 4766 in 2 years in Jiujiang, but the small units accounted for about 80% of the total, while the levels of hygiene were almost C or D by the end of 2007. The remaining 20% of large and medium-sized units Levels are mostly B and C, A still only accounts for 1.2%. [Conclusion] The number of catering units in Jiujiang City increased year by year, mainly due to the rapid increase of small-scale catering units. They were also the difficulties in the implementation of hierarchical quantitative management, showing the lowest number and proportion of catering units. Future work should focus on guiding them to conscientiously improve their sanitation situation, raise the level of assessment, and increase publicity to consumers.
