目的:了解顺义区奥运相关餐饮业食源性致病菌污染状况,为政府部门奥运期间食品安全保障工作提供科学依据。方法:按照国家标准GB/T 4789的相关方法,对7类食品进行沙门氏菌、志贺氏菌、金黄色葡萄球菌、单核细胞增生李斯特氏菌、变形杆菌、副溶血性弧菌、肠出血性大肠埃希氏菌O157H7的分离、生化及血清学鉴定。结果:2007~2008年共采集凉拌菜、炝拌菜、沙拉、熟肉制品、生食或半生食水产品、爆炒菜、冷加工糕点等7类食品1022件,检出食源性致病菌23株,总检出率为2.25%,其中,金黄色葡萄球菌20株,检出率为1.96%;单核细胞增生李斯特氏菌3株,检出率为0.29%;其它致病菌均未检出。讨论:顺义区奥运相关餐饮业存在食源性致病菌的污染,其中炝拌菜、熟肉制品的污染比较严重,提示食品从业人员应提高卫生意识,卫生监督部门应加大对餐饮业的监督力度,从而避免食源性疾患的发生。
Objective: To understand the pollution status of food-borne pathogenic bacteria in Olympic-related catering industry in Shunyi District and to provide a scientific basis for food safety and security during the Olympic Games in government departments. Methods: According to the related methods of national standard GB / T 4789, seven kinds of foods were treated with Salmonella, Shigella, Staphylococcus aureus, Listeria monocytogenes, Proteus, Vibrio parahaemolyticus, intestinal hemorrhage Isolation, biochemistry and serological identification of Escherichia coli O157H7. Among them, the pollution of stir-fried vegetables and cooked meat products is more serious, suggesting that food practitioners should raise awareness of hygiene, and health supervision departments should step up their efforts in food and beverage industry Supervision efforts to avoid the occurrence of food-borne illness.
