【目的】测定富硒米中某些化学形态硒的含量 ,为将富硒米用于肿瘤预防提供科学根据。【方法】 2 ,3 二氨基萘荧光分析法测定富硒米中总硒、无机硒、有机硒含量 ;CNBr 2 ,3 二氨基萘荧光分析法测定硒蛋氨酸中的硒含量。【结果】夏、秋季收获的富硒米中总硒含量分别为 (2 71± 0 97) μg/g ,(9 87± 1 18) μg/g ,均大大地高于普通米 ,P <0 0 0 1;有机硒含量分别为 2 6 8μg/g ,9 77μg/g ,均占总硒含量的 99%以上 ;富硒米中的有机硒主要成分为硒蛋氨酸 ,含量分别为 (1 45± 0 6 7)μg/g ,(4 96± 0 98) μg/g ,它们占总硒含量的 5 3 5 % ,5 0 5 %。【结论】富硒米中的硒绝大部分是天然有机硒 ,有机硒的主要成分是硒蛋氨酸。
【Objective】 The objective of this study was to determine the content of some chemical forms of selenium in Se-enriched rice and to provide a scientific basis for using Se-enriched rice for tumor prevention. 【Method】 The determination of total selenium, inorganic selenium and organic selenium in selenium enriched rice by 2, 3 diaminonaphthalene fluorescence analysis and the determination of selenium in selenomethionine by CNBr 2, 3 diaminonaphthalene fluorescence analysis. 【Result】 The results showed that the total selenium contents in selenium-enriched rice harvested in summer and autumn were (2171 ± 0 97) μg / g and (9 87 ± 1 18) μg / g, respectively, much higher than those of common rice The content of organic selenium was 26.8μg / g and 9 77μg / g respectively, accounting for more than 99% of the total selenium content. The main component of organic selenium in selenium-enriched rice was selenomethionine, the contents were (1 45 ± 0 6 7) μg / g and (4 96 ± 0 98) μg / g respectively, accounting for 53.5% and 55.0% of the total selenium content, respectively. 【Conclusion】 Most selenium in selenium-rich rice is natural organic selenium, and the main component of organic selenium is selenomethionine.
