作者对广州市白云机场口岸1994-1997年旅客服务公司下属四家餐厅的食品、餐具的卫生状况进行调查分析。根据随机抽样检验数据,对比分析了该四家餐厅在1994-1997年中的卫生状况的变化及差异。1994-1997年对这四家餐厅共抽检食品1769份,合格样品1683份,总合格率95.14%;共抽检餐具1914份,合格样品1903份,总合格率98.04%。不同餐厅,不同时间抽检的食品、餐具卫生合格率存在差异,但总合格率较高,说明白云机场范围内的这四家餐厅的卫生状况较好,但存有不足。对这四家餐厅的定期(每月一次)的卫生监督十分必要,并有良好的效果,但也需进一步的加强执法力度及双方的配合。

Based on the random sampling test data, the changes and differences of the hygienic status of the four restaurants in 1994-1997 were compared. From 1994 to 1997, 1,769 food samples and 1,683 qualified samples were collected from these four restaurants. The total pass rate was 95.14%. A total of 1914 tableware samples were taken and 1903 qualified samples were obtained. The total pass rate was 98.04%. Different restaurants, sampling at different times of food, tableware hygiene pass rate there are differences, but the total pass rate is high, indicating Baiyun Airport within the four restaurants in good health, but there are deficiencies. The regular (once-monthly) health supervision of the four restaurants is necessary and effective. However, it is necessary to further strengthen law enforcement and the cooperation between the two parties.
