从栀子果实中提取的黄色素,与铁、铜、锡、铝等金属离子进行反应,结果表明:铁、铜离子可导致栀子黄色素褪色,使其稳定性减弱;锡、铝离子不使栀子黄色素褪色,也不改变其吸收峰波长,且增加了其吸光度,使其保存鲜艳黄色,说明铁、铜对栀子黄素色素有不良影响,应在生产、贮存、包装、运输中避免接触;而锡、铝对其不产生不良影响,宜作为栀子黄色素生产、贮存、包装的材料。
The yellow pigment extracted from Fructus Gardeniae reacted with iron, copper, tin, aluminum and other metal ions.
