目的了解铁岭市食品中食源性致病菌的污染状况,对食源性致病菌进行监测。方法随机采集市售食品(生畜肉、生禽肉、动物性水产品、中式凉拌菜、鲜榨果汁、非发酵豆制品、婴幼儿配方奶粉),依据全国食源性致病菌监测2010年度工作手册及GB/T 4789-2003《食品卫生微生物学检验》进行检测。结果生禽肉、动物性水产品和中式凉拌菜中致病菌检出率分别为5.0%、20.0%和30.0%。115份样品中沙门菌检和副溶血性弧菌检出率均为3.5%,金黄色葡萄球菌检出率0.9%,未检出其它致病菌。结论铁岭市食品中存在食源性致病菌的污染,副溶血性弧菌、金黄色葡萄球菌和沙门氏是污染食品的主要致病菌。
Objective To understand the status of food-borne pathogenic bacteria in Tieling foodstuffs and to monitor food-borne pathogens. Methods Commercially available foods (live meat, raw poultry meat, animal aquatic products, Chinese salad, fresh fruit juice, non-fermented soy products, infant formula) were randomly collected and monitored according to the national foodborne pathogens Manual and GB / T 4789-2003 “Microbiological examination of food hygiene” for testing. Results The detection rates of pathogenic bacteria in raw poultry, animal aquatic products and Chinese salad were 5.0%, 20.0% and 30.0% respectively. The detection rates of Salmonella parahaemolyticus and Vibrio parahaemolyticus were all 3.5% in Staphylococcus aureus and 0.9% Staphylococcus aureus in 115 samples. No other pathogens were detected. Conclusion There are food-borne pathogens contamination in food in Tieling, Vibrio parahaemolyticus, Staphylococcus aureus and Salmonella are the main pathogenic bacteria in contaminated food.
