[目的]探讨微波消解-铬天青S分光光度法测定食品中铝的含量。[方法]在pH在6.7~7.0范围内,铝在乙二醇辛基苯醚(OP)和溴代十六烷吡啶的存在下与铬天青S反应,生成蓝绿色四元胶束,其吸光度与铝含量在一定浓度范围内成正比。[结果]铝含量在0.50~10.00μg呈良好的线性关系,相关系数r=0.9996,相对标准偏差小于2.91%,回收率在91.0%~102.0%之间,检出限为0.01μg。检测3类食品100份样品,其中馒头、油炸食品、膨化食品的合格率分别为92.5%、45.0%、85.0%。[结论]该方法操作简单,显色灵敏、稳定,可用于食品中铝的检测。
[Objective] To investigate the determination of aluminum in food by microwave digestion-chromazurol S spectrophotometry. [Method] With the pH ranging from 6.7 to 7.0, aluminum reacted with chrome azure S in the presence of ethylene glycol octyl phenyl ether (OP) and bromocetylpyridine to form a tealtrecoidal quaternary micelle. Absorbance and aluminum content in a certain concentration range is proportional to. [Result] The results showed that the correlation coefficient was 0.9996, the relative standard deviation was less than 2.91% and the recovery was between 91.0% and 102.0% with a detection limit of 0.01μg. 100 samples of 3 kinds of foodstuffs were detected. The pass rates of steamed bun, fried food and puffed food were 92.5%, 45.0% and 85.0% respectively. [Conclusion] The method was simple in operation, sensitive in color and stable, and could be used for the detection of aluminum in food.
