以豇豆为试材,采用低温预贮(low temperature conditioning,LTC)和自发气调(modified atmosphere,MAP)保鲜的方法,研究了LTC+MAP处理对豇豆冷害控制的影响。结果表明:LTC+MAP处理能够较好地维持豇豆的外观品质,延缓其水分、可溶性固形物、抗坏血酸等物质的损失,抑制豇豆的相对电导率和丙二醛(MDA)含量的上升,保护细胞膜的完整性,除此之外还能够提高其过氧化物酶(POD)活性,进而增强自身的抗氧化能力。
The effects of LTC + MAP treatment on cowpea chilling injury were studied using cowpea as test material and low temperature conditioning (LTC) and modified atmosphere (MAP) preservation methods. The results showed that: LTC + MAP treatment could maintain the appearance quality of cowpea, delay the loss of water, soluble solids, ascorbic acid and other substances, inhibit the relative conductivity of cowpea and the increase of malondialdehyde (MDA) content, protect the cell membrane In addition to its ability to increase its peroxidase (POD) activity, thereby enhancing its own antioxidant capacity.
