《农政全书》是明末杰出科学家徐光启的代表作。书中系统摘编和著述的贮藏资料全面地反映了我国古代果蔬贮藏科学。特别是在我国果蔬贮藏学中早已采用近代科学的方法。徐光启是我国近代果蔬贮藏科学的先躯,《农政全书》则是我国近代果蔬贮藏的开端。书中反映的贮藏学思想和方法至今犹有重要的借鉴价值。
“The Complete Works of Agriculture” is the representative of outstanding scientist Xu Guangqi in the late Ming Dynasty.
