本文利用系统聚类的类平均法,以出粉率、湿面筋、沉降值和粉质仪测定值为指标,对征集于北方冬麦区和国外的45个小麦品种(系)进行了聚类分析。结果表明,供试材料中多数属于中、高出粉率品种;高面筋含量品种占48.9%;而绝大多数品种属中、低沉降值类型。面团形成时间、稳定时间和评价值三性状的聚类结果表明,64.44%的品种属于弱筋力种质,而强筋力材料仅占4.44%。因此,加强优质种质引进、筛选和面包烘烤品质的改良,仍是我国近期小麦品质改良的重点任务之一。
In this paper, 45 kinds of wheat cultivars (lines) collected from the northern winter wheat area and abroad were clustered by using the method of cluster-like system average method, with the output of flour, wet gluten, sedimentation value and determination of powdery mildew as index analysis. The results showed that most of the tested materials belonged to middle and high yielding varieties, and the high gluten content accounted for 48.9%. Most of the cultivars belonged to medium and low sedimentation type. The clustering results showed that 64.44% of the cultivars belonged to the weak gluten germplasm, whereas the gluten-resistant materials only accounted for 4.44%. Therefore, strengthening the introduction of quality germplasm, screening and improvement of bread baking quality is still one of the key tasks of improving the quality of wheat in our country recently.
