[目的]掌握寿光市餐饮业食(饮)具卫生状况,进一步了解近年来餐饮业消毒安全专项整治效果。[方法]于2009年9~12月对全市城乡范围内的365家餐饮单位进行了调查,并在其中325家中随机采集各类食(饮)具样品1725份。[结果]市、乡两级餐饮单位食(饮)具样品合格率分别为86.41%、81.77%;学校食堂、集体食堂、社会餐饮三类餐饮单位样品合格率分别为82.43%、85.94%、84.14%,;小食(饮)具筷子、匙子、小碟、小碗的样品合格率分别为93.75%、94.33%、92.98%、91.72%,大食(饮)具大碟与汤盆的样品合格率为86.41%、85.58%。[结论]寿光市餐饮单位自身管理水平有所提高,但仍有少数单位特别是乡镇的社会餐饮存在消毒设施不健全,大食(饮)具样品合格率相对较低现象。
[Objective] To master the health status of food (drink) in the catering industry in Shouguang City and learn more about the special rectification effect of disinfection and safety in the catering industry in recent years. [Methods] From September to December 2009, 365 food and beverage units within urban and rural areas of the city were surveyed and 1,725 samples of various types of food and drink were randomly collected from 325 of them. [Results] The passing rates of food samples of catering units at municipal and township level were 86.41% and 81.77% respectively. The passing rates of samples in three types of catering units in school canteens, collective canteens and social catering were 82.43%, 85.94% and 84.14 respectively % ,; snacks (drink) with chopsticks, spoons, small dishes, small bowl of the sample pass rates were 93.75%, 94.33%, 92.98%, 91.72%, large food 86.41%, 85.58%. [Conclusion] The self-management level of catering units in Shouguang City has been improved. However, there are still a few units, especially towns and townships, which have inadequate disinfection facilities for social food and restaurants, and relatively low sample passing rates for big food (drink).
