研究了番茄果实生长发育过程中呼吸强度、乙烯释放情况和糖类、有机酸、色素等有机物的变化,结果表明呼吸强度和乙烯释放量在成型青果期与生理成熟期出现两个转折点;糖类和有机酸在生理成熟期之前逐渐增加,以后则逐渐减少;在未成型青果期,主要含叶绿素,以后叶绿素含量逐渐降低,至生理成熟期,开始出现番茄红素,并逐渐增加,使果实变为红色。
The changes of respiration rate, ethylene release, organic compounds such as carbohydrates, organic acids and pigments during the growth and development of tomato fruits were studied. The results showed that there were two turning points in respiration rate and ethylene release amount during forming and fruit ripening stages. And organic acids increased gradually before physiological maturity, but decreased gradually thereafter. In the unformed green fruit stage, the content of chlorophyll mainly decreased after chlorogenic acid was added, and lycopene began to appear at the physiological maturity stage and gradually increased Red.
