食盐是人们日常生活中的主要调味品,也是人体必需元素钠和氯的重要来源。食盐的摄入量与人体健康有着密切关系。长期吃盐太少,体内缺钠会出现疲倦、头晕、恶心、腹泻、抽搐等症状;吃盐太多,钠摄入过量则可引起小动脉痉挛,加速肾小动脉硬化而使血压升高。流行病学调查表明,食盐的摄入量与高血压的发病率呈正比,也就是说吃盐越多高血压病的发病率也越高。我国北方人“口重”,高血压的发病率就高于“口轻”的广东。
