目的:优化地衣芽孢杆菌水解东海香参工艺,探讨水解液的降血脂功能。方法:以东海香参体壁为原料,以水解度为标准,利用响应面法优化地衣芽孢杆菌水解东海香参的条件;以高脂饲料喂养ICR小鼠,建立高脂血症模型,观察水解液对小鼠肝系数、脂肪系数、血脂水平和血清抗氧化功能的影响。结果:最佳条件为水解时间56 h、液料比5.3∶1、接种量6.4%(即初始活菌数6.4×10~5CFU/m L),此条件下水解度为53.74%。东海香参水解液能显著降低小鼠肝指数、脂肪系数、血清总胆固醇(TC)、甘油三酯(TG)、低密度脂蛋白胆固醇(LDL-C)、动脉硬化指数(LDL-C/HDL-C)水平,升高高密度脂蛋白胆固醇(HDL-C)和动脉硬化指数(HDL-C/TC)值,降低肝组织丙二醛(MDA)含量,提高肝组织过氧化物歧化酶(SOD)活力。结论:东海香参的地衣芽孢杆菌水解液具有调节降低血脂水平和增强抗氧化功能的作用,可减少高脂膳食导致的氧化损伤,有望成为一种新型广泛使用的血脂调节保健食品。
Objective: To optimize the hydrolysis process of B. licheniformis in Donghai ginseng and to study the hypolipidemic function of hydrolyzate. Methods: The body wall of Radix Aconiti Kusnezoffii in the East China Sea was used as raw material. The hydrolysis degree was used as the standard to optimize the condition of Bacillus licheniformis hydrolysis of Radix Aconiti decoction by response surface methodology. The model of hyperlipidemia was established by feeding HFR with ICR mice. Effect of liquid on mouse liver coefficient, fat coefficient, blood lipid level and serum anti-oxidation function. Results: The optimum conditions were: hydrolysis time 56 h, liquid to liquid ratio 5.3:1, inoculation 6.4% (initial viable count 6.4 × 10 ~ 5CFU / m L). Under these conditions, the degree of hydrolysis was 53.74%. East China Sea ginseng hydrolyzate can significantly reduce liver index, fat coefficient, serum total cholesterol (TC), triglyceride (TG), low density lipoprotein cholesterol (LDL-C), atherosclerosis index C, HDL-C and HDL-C / TC, reduce the content of malondialdehyde (MDA) in liver tissue and increase the activity of superoxide dismutase SOD) vitality. CONCLUSION: The B. licheniformis hydrolyzate from the Chinese red ginseng has the effect of lowering the blood lipid level and enhancing the anti-oxidant function, and can reduce the oxidative damage caused by the high-fat diet and is expected to become a new and widely used lipid-adjusting health food.
