提起甜味剂,我们首先想到的是蔗糖、葡萄糖、果糖、麦芽糖这些天然存在的单糖或双糖,以及糖精、甜蜜素、阿斯巴甜这些人造甜味剂。其实还有一类天然的甜味剂现在使用得越来越多了,那就是糖醇。它们是单糖的衍生物,单糖有一个氧原子被氢原子和羟基取代,变成了醇,所以叫糖醇。糖醇包括木糖醇、甘露醇、山梨糖醇、乳糖醇、麦芽糖醇等等,其中用得最多的是木糖醇。木糖醇在许多果实、谷物、蔬菜中都有,不过量不多。工业上使用的木糖
