小麦是世界上栽培面积最大的作物,也是人类植物蛋白的主要来源之一。目前,世界小麦的平均蛋白质含量大约为13%,这与人类在自然界中所占有的丰富多采的小麦蛋白质基因资源相比,就显得非常之低,说明人类对这一资源的开发和利用还远远不够。如果能用各种方法使现有的小麦蛋白质基因资源的开发和利用稍微提高一步,也将对人类生活产生巨大的影响。
