普遍认为,煮烂的肥肉适量食用,对人体有益。但也有人认为,肥肉中的饱和脂肪酸和胆固醇都是非常稳定的物质,不容易通过加热受到破坏。不少读者对于这两种矛盾的说法颇感困惑。
It is generally believed that proper amount of boiled fat is beneficial to the human body. However, some people think that fat fatty acids and cholesterol are very stable substances, not easily damaged by heat. Many readers are puzzled by these two contradictions.
