磷化氢(PH_3)对节肢动物有强烈的毒性,是长期用于防治仓库害虫的熏蒸剂。该药物毒杀昆虫类等的作用机理已比较清楚,主要是抑制电子传递系统末端细胞色素氧化酶(CYtA)的活性,从而抑制或破坏线粒体的正常呼吸,至于 PH_3对粮食本身及粮食微生物呼吸的影响,除 Rohrlieh 等人的研究间接涉及这一问题外,国内外尚未见专门的报导。阐明 PH_3对粮食和粮食微生物的作用及影响,在粮食品质、食品卫生、发酵工业等方面,具有理论和实际的意义。本文报导 PH_3对储藏稻谷和大米呼吸作用的影响,并由此提出熏蒸技术上的一些见解,为仓储实践提供参考资料。
Phosphine (PH_3) is very toxic to arthropods and is a long-term fumigant used to control warehouse pests.
